Can it be done just a little bit more S&P? looks a tiny bit too red for me, but I'd love to try it. Had deer, moose, if I've had elk before I don't remember it.
 
I tend to like my red meat pretty rare, depending on cut. I might be a little more hesitant with game animals though.

But it looks really good.
