I don't really celebrate St. Patrick's Day but I did have dinner. Salmon with honey mustard, leftover pasta, and some green things (see... I did have some Irish color on the plate).

Took Mrs. Boss out for her birthday dinner tonight at the local Italian joint. Decent food and it was nice to go out for a change.

She had a 3 meat pasta dish, but can't remember the name. I got the Chicken Fettuccini Alfredo.

Cannoli instead of cake.

New toaster oven is turning out to be quite a learning process. Get really hot and I can't seem to remember to turn the heat down and/or take it out early! Always looks fine but...
Today I overcooked a beautiful Stuffed and Rolled Pork Loin Roast. A little upset with myself. Pan drippings were not very good for gravy either. Search is now on for using up some dry Pork Loin. At least the taste was there. The roast potatoes were great.
(and I forgot to take a picture of it - I will say it was beautiful looking)
 
Sorry, dragnlaw, about the overcooked pork roast. I’ve been there! Try making soup. Round up the usual suspects (sorry, I just watched Casablanca for the 90th time!!) — sauté onions, garlic, carrots, celery, peppers, herbs, etc. Add broth and cooked rice or pasta, if desired. A can of drained and rinsed beans is also a good addition. Dice the pork and add it at the end. This should make a hearty soup. OR … grind the pork in your food processor, add mayo, mustard, finely chopped onion, pickles, herbs of choice. Use it as a spread on crackers or a dip with veggies. Hope these suggestions help.
 
Thank You @ShellyCooks It certainly does. It was about 3 lbs. Originally for family meal, but, there yuh go... life got in the way...
:LOL: So now I've got A LOT of leftover pork roast :LOL:

I've also thought of Stir Fry. Think I'll have to freeze some in individual serving packages. Probably sliced. Unless someone has a better idea?
 
There was green on my plate too. I had a pork loin chop, the last of the white bean mash with artichoke and asparagus, some sautéed mushrooms, and a salad of green crisp lettuce, deseeded cocktail tomatoes, and some microwaved potatoes taken out of their skins with sour cream. It was good, especially for a very easy supper..
