@cjmmytunes - that was what the title was referring to. Thanksgiving leftovers for a majority of our US cohorts.
My dish wasn’t leftovers - I had chicken thighs on our market run the other day so I got a big bag, portioned them out and decided to do a new dish for tonight. I have a lot of chicken dinners in my arsenal, but wanted to make something different.
So I went into the poultry subforum and MsMofet’s recipe caught my interest.
I think most people, myself included, normally associate the saltambocca dish with veal. So I was intrigued to try this recipe.
@msmofet - I loved it and the only change I made to your recipe was to use thigh instead of breast. The sauce was really good, the cheese and prosciutto worked nicely with chicken too.
MrJade and his brother both demolished their plates and brother went back for more! A winning meal that I have saved to my app folder - but it will always carry your name in the title. Thanks đź« 
 
I had roast chicken. I spatchcocked the bird with the intention of completely halving it and freezing half. But roasted the whole thing anyway. Positively delicious.
The hope is I will make a couple of Pot Pies and something else with the leftovers - if I don't pig out and keep nibbling on it too much.

I love spatchcocking chicken. It seems to have so much more flavour!
 
It's Friday. I had fish. I was going to have fish & chips, but then I remembered I bought torttillas when I was in Fart & Spinal, so I went with baja fish tacos instead with some leftover Mexican rice on the side.

So, for those of us who don't live in the US, what is the real name of "Fart & Spinal"?
 
I hadn't cooked a turkey in years, so I hadn't had the leftovers in years. I usually make a smaller bird, like Cornish hens or chicken, or just parts, like duck breast.

I was craving a plain turkey sandwich on white bread with cranberry and mayo. Judy wanted an open faced hot turkey sandwich with stuffing and gravy.

It was late, so my simple sandwich won tonight and tomorrow I'll do the hot sandwich. That will be the end of our 1/2 turkey breast. And hopefully the end of our cravings for another 10 years.
