I love spatchcocking chicken. It seems to have so much more flavour!I had roast chicken. I spatchcocked the bird with the intention of completely halving it and freezing half. But roasted the whole thing anyway. Positively delicious.
The hope is I will make a couple of Pot Pies and something else with the leftovers - if I don't pig out and keep nibbling on it too much.

So, for those of us who don't live in the US, what is the real name of "Fart & Spinal"?It's Friday. I had fish. I was going to have fish & chips, but then I remembered I bought torttillas when I was in Fart & Spinal, so I went with baja fish tacos instead with some leftover Mexican rice on the side.
