I didn't even have to read your comment. I started to chuckle as soon as I saw it!
Makes you want to either cuddle or slap it.
 
@forty_caliber do you do a 2 day thing with your sourdough, with an overnight fridge time? Or all in one day.
All of the sourdough recipes that we use, waffles, pizza dough, and the rustic sourdough are geared toward using the sourdough discard. I even have a sourdough cake and a cobbler recipe around but we don't make many sweets these days. So with this application in mind, I leaven the bread with dry yeast to be sure there is enough for the rise.

I feed the starter after making the batch of whatever. Using it in this manner is more spontaneous since I can take discard anytime I'm ready.

I have done the poolish method in the past so that no yeast was needed but I found that using discard is just easier for me. I don't have to remember to feed it before hand.

The answer is, just a four hour rise time for this particular recipe.

I see it.

All these 'bread characters' reminds me of lying in the grass with my friend, Robin, and naming shapes we would see in the clouds. Simple, relaxing times. I should really do that again, just to do it. The problem would be getting back up :ROFLMAO:
