All of the sourdough recipes that we use, waffles, pizza dough, and the rustic sourdough are geared toward using the sourdough discard. I even have a sourdough cake and a cobbler recipe around but we don't make many sweets these days. So with this application in mind, I leaven the bread with dry yeast to be sure there is enough for the rise.@forty_caliber do you do a 2 day thing with your sourdough, with an overnight fridge time? Or all in one day.
