Veggie paninis! Don't laugh please!
After marinating in a *local restaurant's Pepper Jelly Vinaigrette the eggplant is on the Keg.
Did I mntion that it was one HOT motheroo out here today?
The squash, zuchinni and portobello mushroom on now.
Now, I really enjoyed these paninis.
I had mine with a little of all the veggies and provalone cheese.
One more close up since I couldn't decide which picture to use.
I could easily eat this once a week. Pretty tasty and not a heavy meal.
