Ham, flavor Question

What gives Cured Ham it's unique flavor?

I know there is lots of salt, and the Pink comes from the Nitrates for curing..

But what gives it that Wonderful strange flavor?...

I had a Big, City Ham Steak last night and just loved it..

so just Wondering..
