I'm still perplexed by AnneWith AnE with the name Cassandra. :unsure:

Where in Texas are you? I'm in Frisco, just north of Dallas. I grew up in Port Arthur.

I'm down to cooking or one now, too. It's not that hard. You just have to get into that cooking for one mode. I have no plans for adding to my household at this point in life, so I'm pretty committed to cooking for one.

It comes down to this... Do you like to eat good food? Do you like cooking? If yes, then there are plenty of us here who do that, for one reason or another.

I'm in the Bryan/College Station area. I've lived here for going on 15 years. I was born and raised in Huntsville though.

AnneWithAnE is a reference to the book Anne of Green Gables by Lucy Maud Montgomery. It was my mother's favorite book and I was given the middle name of Anne when she couldn't think of a better one. My mother recently passed away and that's stirred up fond memories of her even though our relationship has always been strange. One of them being laying on the couch with her, watching the shows when they came out. 😊

Ask in the Thread if there are specific things that you like or are looking for. Like something with chicken? maybe fish? big on salads and/or soups?

Welcome to the forum! I cook for two (and anyone who is passing by). I have found that if I am making a favorite dish that lends itself to being frozen, I go ahead and make the normal amount and freeze half to use when I'm running late or just too tired to mess about in the kitchen.
I, too, live in Texas--Central Texas not far from Waco. We moved here about 20 years ago and I'm still adjusting!
I was born and raised here in Texas but started moving around at the age of 15. Since then I've been all over the country but ended up back here when my parents started to get sick. I settled here, in the Bryan/College Station area, but after 15 years I'm ready to move along again. I guess 15 is my max! Lol
I've thought about freezing, and I've tried it before but always had problems with freezer burn. I have an old vacuum sealer that I use to portion out meat, but that's about all it's good for.
 
Except for Grandma's sauce and chili, I just cook for two, put half in a divided container (1, 2 and 3 compartment containers are available from Amazon), and stick it in the freezer. After one week of doing this, you have all your meals for next week!

NOTE: If you buy glass containers you can reheat right in the container, but if you buy plastic ones, remove the food from the container and plate it before reheating or the plastic will absorb the juices and permenantly discolour.
Thank you, that's a great idea. I assume you let them defrost before you put them in the microwave?

You can freeze anything, including soups, using your vacuum sealer. You just put a serving of soup/stew/gumbo... whatever, in a bag, stand it up in the freezer until frozen solid, then vacuum seal it.
