My name is Tracy Poe. I have been cooking for my wife because she cannot have a lot of salt for the last few years. Since 2009, I have had a YouTube channel under my name "Tracy Poe" where I made animated music videos. I have repurposed this channel and have begun making cooking videos for recipes that I learned, modified, and invented. I have never been a professional cook but have cooked my whole life for myself and family. I have come here to learn and share ideas concerned with cooking.
 
Welcome. I'm also a Texan on a low sodium diet... my kidneys don't process sodium well.

The biggest rule is to avoid processed foods, and eat restaurant food in moderation. Both are sodium bombs.

After a while cooking low sodium, I got to where restaurant food often tastes too salty.

My wife also says that things taste to salty. Like canned tomatoes. But the no salt canned tomatoes taste too sweet as they replace the salt with sugar.

It seems our taste buds adapt. I generally buy no salt added canned tomatoes. The ones I buy do not have sugar in them. I add salt as I feel is needed to taste right to me. The amount of salt that tasted right to me five years ago is more than what it is now. A professional chef might tell me I'm wrong, but that has been my experience.

If I consume too much sodium, bad things happen. I'm talking "a few days in a hospital" kind of bad things.
