Yes! I have not heard of coconut butter...but I know that coconut milk products have a very rich taste. I think that would make an amazing sugar cookie, but probably wouldn't work in gingerbread.
 
Actually, coconut oil (organic, from Costco) has very little coconut smell or taste. Nothing like coconut milk. It just might work.

Awesome! Thank you very much! I will hunt down some coconut oil, try one of the egg substitutes from the link, and have a go! I'll post when I get some results.
