Hot Chicken Sandwich Pot Pies

Hope these willl be 'pull out of freezer for an easy meal'.
A can of St Hubert Hot Chicken Sandwich gravy, frozen vegies (about 1+ cup), chopped up l/o roast chicken (about 70 gr ea pie).
Now what do I do?
1. Put the crust on and bake, then freeze?
2. Put the crust on and just freeze?
or 3. could be to just freeze as is and make biscuits fresh while heating up the frozen pie? And if I did this I think I would wait 'til these are cool and then bag them for the freezer. Might be faster and easier to defrost come a supper time.

I've frozen baked chicken pot pie before. Not sure I'd freeze them before the crust is baked. I'd be concerned about the crust not turning out right or getting soggy during thawing, unless you just toss them directly into the oven. But it may work.

Baking them first gets everything cooked. Just think frozen chicken pot pies you buy at the store. The crust is already pre-baked.

I think option #3 sounds like a good idea.

And those look delicious.
 
It was OK, the chicken was great, the tator tots even better, but have come to the conclusion I really don't like those frozen vegies much. The gravy should have been a little thicker but I was expecting that as it is a gravy afterall. Guess I should have thickened it earlier.

Sometimes the frozen veg doesn't get cooked enough for my taste. I don't want them mushy, but I don't like them still crunchy in a baked pot pie. So sometimes I'll boil the veggies for a bit first before adding them to the pie mix.

When I make my homemade chicken pot pie, I just use a peas & carrots mix. Those are the only veggies I put in it. Sometimes I'll add a small can of mushrooms, if I'm in the mood for them. I also make my own filling. I'm not crazy about gravy-type fillings. I like my creamy filling instead.
 
I did have them in the gravy simmering away for quite some time. And yeah, I too prefer creamy fillings. But I was using a 'cheat' can of Hot Chicken Sandwich Gravy. As I mentioned I thought about thickening it, should'a, could'a and didn't - LOL my bad!

Sure was a quick easy meal though! Open can, heat with some frozen vegies, pour over roast chicken. LOL and not bad - just not perfect!

I've made the 'easy' pot pies before using chicken gravy and cream of chicken soup, adding in cooked chicken and using refrigerated pie crust. Not quite as good as my homemade one (I make everything from scratch, including the crust) but was very tasty for a quick, easy meal.

Chicken pot pie is one of my most favorite things ever. And chicken & dumplings. Chicken & noodles (over mashed potatoes). Chicken noodle soup...

Can you tell I love chicken? :ROFLMAO:

Yep, the mushrooms are yummy.
