BTW, when I dry lemon zest or the coloured part of the peel, I just air dry them. I have a couple of pieces of waxed paper that I keep with my spices. I reuse them to zest the lemons or limes onto. Then, I just leave the out to air dry for a day or two. Then I fold the waxed paper and pour the bits of zest into a jar.

If you are referring to the zest, there is no point in freezing it. It rehydrates virtually instantly and is just as good as fresh. Unless it is for organizing reasons, in which case, do what works best for you.
