I got a meat thermometer!!!

You'll probably need more than one. I have an instant read stuck to the side of my fridge with magnets, and I have two probe thermometers, one for the turkey breast and one for the stuffing.
 
Sara An instant read is your best bet and most convenient and versatile one for a kitchen.
Leave in thermometers are basically only good for meats done in an oven.
I use the instant read for frying meats, breads as well as spot checking big meats in ovens. Both my probe thermometers haven't been used in .... years!
 
This is my go to:

It’s a Matador folding probe. It has presets for beef, chicken, pork, lamb and turkey with additional presets for rare, medium rare, medium and well done.
It also has manual control, which is what I use most. The presets are good if you’re not confident about meat temperatures.
I use it for all kinds of things, including checking the temperature of oil for deep frying etc. The manual controls make it easy to use in all kinds of stuff.

Then I have a plug in probe inside my whizz bang oven that I recently installed with my kitchen reno. The probe plugs in to your meat when you put it into the oven. Then on the control panel, you set the temperature that you want to cook the meat to. The oven will cook it until it reaches the temperature setting and then turn itself off. You can also set the timer to go off at regular intervals for turning/basting and such.

I have given meat thermometers as housewarming gifts because they are very useful kitchen tools that a lot of cooks don’t have. 🫠
 
I have two of the leave in the food kind, both from Thermoworks. I got the Dot for free when I bought something else. I used one of them when I cooked a steak with the reverse sear method. I also use a leave in thermometer when I poach sausages or rullepølse (a Danish rolled sausage). I turn the burner on, to kinda low and have it alarm me when the water gets to 70°C. I also have a couple of instant read Thermapens stuck to my fridge. They have silicone "boots" with embedded magnets. I bought those extra because they are very useful. The boots glow in the dark, so if you drop one when grilling after dark, it's easy to find. They also pad the pens, so they don't get damaged when dropped on patio stones.
