Kind of a low-key day today, so I depended on an old tried and true entree...poor man's beef stroganoff. Ground beef, onions, garlic, mushrooms, cream of mushroom soup, and a touch of sour cream. We had it over egg noodles with buttered baby peas as our side. More of the yummy apple-cinnamon cake for dessert. We'll have the cake for 2 more nights before we attack the cookies I made this afternoon.

What is on everyone else's table?

I've got some bone-in skin-on chicken thighs in the hot box along with some diced sweet potatoes.
When their just about done, I'll quick stir-fry some Brussel Sprout Leaves (I pull them apart, we don't care for the middles of them) in some Olive Oil and Garlic.

Funny story about the Sweet Potatoes: I had a curb-side pick up order that I placed online with Wally World. As I was unloaded my grocery haul, I find a bag of frozen, peeled and diced Sweet Potatoes
🤷🏼‍♀️
I'll take that, thanks.

I finally got around to trying out a Danish dish for a curry soup with peaches. Well, I used frozen mango instead of canned peaches and I deseeded and chopped up some roma tomatoes instead of using canned crushed tomatoes. That was boring. I won't be making that again. There was too much fruit and the shrimp garnish didn't seem to go well with the soup. Well, live and learn. I had a roasted hot Italian sausage and some whole wheat toast too, so I did enjoy part of my meal. I have half a litre of soup left. :glare: I also have half a litre of the veggie stock I made to use in the soup recipe. It tastes fine and is always useful. I forgot to butter the toast until after I took the pictures.

who's that?? and is that your cherry jam spread on a chop?

Ol-blue was a truck's name.
And also a former member here who posted many simple, but delicious recipes. More of a home cooked/diner style. And many which could easily be cooked outdoors while camping.

Sure those are my cherry reserves. Bought them at the store a month or so ago ;)
