ISO Crispy Spinach

I once made some fried crispy spinach. I know I used egg white for the spinach leaves. I cannot find the recipe in my stash nor on line! At least not with egg whites.
Has anyone here made this?
 
My son had been telling me it was good. Like you taxy, I'd seen it on Asian menu's but never ordered. Then one day with a friend, her mom & sis, we stopped in one on the way home. All 3 ordered it and said I had to try!
I did and I was super impressed - it was great!
My son laughed and said the proverbial... "I told you so!"
I tried it at home and was also great but rather messy! This recipe was with egg whites I'm pretty sure!
Of course it's tricky and with said oil all over the place LOL. I'll get it together and do it 'upstairs' where I have proper counter space to the stove top.
 
Don't really know, as I have never considered Kale in any form what-so-ever. It's right up there with liver.:LOL:
