ISO French Fry Coating

There's a bar & grill in my home town called Wicked
Sisters. They have amazing frecnh fries that come with a seasoned flour coating of some kind. I believe this could be done at home, cut the potato, let the fries sit in cold water for an hour or two, to remove excess starches. Then par boil, coat, and deep fry. Does anyone have a seasoned flour recipe for tis?
