ISO help/advice w/cayenne Scoville Heat Units

i was looking online for some cayenne powder and realized that itt come in a wide heat range , from 40,000 to 100,000 SHUs
i have been buying it from Sams Club in the 1 lb containers but wanted something bigger
the ones i have been buying never lists the SHU rating . am i missing something ? maybe there is more than 1 kind of cayenne pepper ?
i would kinda like to know the heat range of what i have been buying before buying something that i have nothing to compare the heat range with
 
Peppers vary in heat, within varieties, much like meat varies in tenderness from cut to cut and animal to animal.
No guarantees with any of them, except Japs are milder than Ghost peppers with some in between.

I've grown cayenne peppers for years in my pepper garden. They do vary in heat. It can be by design, using science, but it can also be due to the weather, or even time of year. The same is true for jalapeños.

My hot peppers were always mild in early summer, then would not set fruit in the hottest part of the summer, but by September, the peppers were scorching hot.

I make my own chili powders, and they are HOT. It takes a lot of dried cayenne peppers to make a little cayenne powder, so I end up having to buy some cayenne powder to blend with my home grown powder.

I would imagine that the labels don't have SHUs because it is hard to be 100 percent accurate. I'm not sure how hot sauce manufacturers are able to label SHUs.

I suspect most brands use a blend of cayenne peppers from multiple sources so they have a consistent heat from year to year. Find a brand you like and go with that in bulk is my suggestion. Contact the brand about a large container order.

I wouldn't buy too much as they do loose some heat over time
 
it takes a lot of it when we are making sausage
for the mild it take 3 tablespoons per 10 lbs
for the hot it takes 5 per 10 lbs
and for the super hot it takes 7 per 10lbs
