ISO help with having vegetables for dinner

Hey everyone do you hqve any idea for dinner with vegetable like sweet potetoes or maybe leak and other vegetables

I have recipes for the following:
Bacon & Leek Potato Gratin
Turkish Leeks ... have not made this one yet
Fennel, Leek Gratin ... not made this one yet either
Leeks Vinaigrette, Goats’ Cheese and Crispy Crumbs
Steamed Leeks with a Mustard & Caper Vinaigrette
several versions of creamed leeks

Don't have a lot of Sweet Potato recipes as I mostly bake them whole and serve with butter.
Or cut in wedges and roasted.
