What is the best way to preserve spaghetti sauce? I usually freeze
it but I am taking some on a two day road trip to visit my daughter.
What is the best way to keep it from spoiling in transit?

I'd freeze it, put in a cooler with some ice, and wouldn't worry if the ice melted, but that's just me. As long as it's kept cold, it will be fine.

It will last 3, maximum 4 days, if you keep it in contact with ice. Pre-freezing might help bridge the 3rd day to the 4th day. My comments come from my long experience camping in remote regions. Your 4th dinner will always feature meat that is preserved in some way (canned, dried, etc.).
 
Basically it is tomato sauce with a few spices and a little rendered meat fat. Meat will be strained out before the trip.
Keep it in a vacuum? You could sterilise the jars, put into them the hot sauce, close and put them upside down until they are cold. It could be a little long, but you shouldn't use any cooler.
