Later I'll have some air fried oil free potato french fries (obviously not fried), with balsamic vinegar/ketchup, and salt. (edit: we made a big batch of chili, so I had the fries w/chili and salt over them.)

I had a sandwich of dave's killer bread, hummus, sweet/savory pickles, red and yellow bell pepper strips. Delicious.

Have a smothered pork chop in the slow cooker. But I also stuffed some mushrooms earlier and ate so much of the stuffing and then the finished mushrooms - sigh - not sure I'll be hungry when that chop is ready.

Yum! I made stuffed mushrooms last week for my mom who loves them. (Basil pesto and Parmesan sundried tomato). I had extra filling so I put it into mini peppers when we had my husband's friend over Wednesday for game night. It was yummy!
 
I still had a bit of defrosted ground beef, so I made "bachelor surprise". It's a stir fry of whatever protein you happen to have, some veggies, some already cooked rice and any sauces or seasonings you want to use. Tamari works really well in this as does brown rice.

So, in this iteration there was ground beef, onion, and radish greens, and brown basmati rice from the fridge, and from the freezer, some diced carrots, corn kernels, broccoli, green beans, and a garlic and ginger pesto. The sauces I used were a Sichuan stir fry sauce, tamari, and LaoGanMa. I also gave it a generous sprinkle of sesame seeds. I really enjoyed that. I had seconds. The radish greens just sort of disappeared in the dish.
