I've made turkey thighs on a charcoal grill with some wood, tips/suggestions, please.

it came out very tasty.
but i had to pour water over the coals because it was too hot.
it was indirect heat but too strong heat..

next time i should use less coals..

do you have any more tips for next time?

i heard you should wait after adding the wood until there is not much white smoke..
is that correct??

i'm planning to make it again tomorrow.
if i want 200 degrees c, do i need to fill the big weber chimney half full with charcoals?


i mean how much coals do i need for 200 degrees c in indirect heat?

i don't want it to be extremely hot like last time..

last time i filled the chimney fully..
 
You regulate the heat by adjusting the vents. I would start with no more than a half chimney of charcoal.
i think i've heard that if using wood as well you should keep the vents open..
i think it was in a video.. if you want i can try to find it..
