2kg’s of chicken breast is waiting to have a turn in the sous vide and at the moment I can only fit about two vacuum packs in the pot with the water free circulating, fingers crossed 🤞

I think you told us about that sharpener when you bought it, no? I loved it and got one too. Yup, does a fantastic job. Far easier than getting out the electric one I purchased several months before at triple the price! LOL guess where that one is!
My biggest problem is finding a smooth enough piece for it to grab hold.

My biggest gripe on the electric one is that it doesn't do small knives, like paring knives or pocket knives. Had I known that I would never have bought it. I can do them on this little guy.
I also have one of these. The V goes on the edge of the table.

Here is the one I have, as mentioned a few days ago. Like I said then, it is more for honing than heavy sharpening. I have a Chef's Choice "professional" sharpener for heavy sharpening.

I also have a Chef's Choice electric sharpener. I won it MANY years ago from QVC when they had the little contests. You answered the question, then they spun the wheel. My wheel stopped on $250 that got added to my account. So I picked several things, including the sharpener. Can't remember what the others were. But it is around 40 years old and still works fine.
 
I've got a 4qt sauce pan do in today. SS.
It will take the place of my non-stick 4qt Cephalon, which is starting to show signs of wear on the non-stick surface. Which is odd, as I never used metal in it when stirring. Maybe just age.

I'm staying away from Cuisinart due to the last couple stainless pots I bought. But still went with a cheaper no-name brand, so we'll see. I mostly only use a 4qt pot for boiling pasta in anyway.
