Knife sharpeners VS Professional sharpener?

Is it better to have knives sharpened professionally by a person with a workshop for that type of thing or to sharpen at home with some store bought sharpener?
 
I use the Edge-Pro system.

over the years, the cost of that 'device' has paid for itself many times over the shipping costs to a reputable sharpening vendor.

It depends.

A qualified pro can do a great job sharpening your knives to your specifications. Others who aren't qualified can do damage.

Home sharpening has the same caveats. If you use good equipment properly, you can get a great edge on your knives. Some electric sharpeners take off too much steel and cause other damage. Some will do a good job.

I use a manual sharpening set that guides me through the steps with consistent angles and finishing stones to finish the job. I take pride in my results. but it requires a time and effort commitment.

I saw a video in which the guy used wet stones. But the guy I met with a sharpening workshop only charged $3.75.

It's a boning knife which is normally very sharp. Wasn't sure if it requires special care for such a flexible blade.
