Well, my point is to get them roasted in a dry heat to brown the outside before you turn the inside into mush. Cookie sheet, pizza pan, small roasting pan. Whatever you’ve got. Around 15 minutes, I would think. Learn as you go. I just watch them every 2-3 minutes until they are done to my liming.

hmmm... thought they'd look more like actual chicken wings. But really - honestly I would try them and assuredly like them but they sort of look like and remind me of ...

galls... (shudder)...

aw sorry Rock, forgive me?

I am curious what the general consensus is on cauliflower. I know it can be ground into processed foods like GF pizza crust, but I don't usually see people eating it as is.
Cauliflower is surprisingly versatile—it’s often used in things like gluten-free pizza crusts, but it can also be really good on its own when roasted or blended into soups for a creamy texture without using dairy. It’s not my favorite in terms of flavor, but I love how well it absorbs spices.

Yeah, cauliflower does make a really good puree without dairy and takes on flavors of spices really well. My favorite way to serve it is, as karaage with a good aioli.

I recently stumbled across a Giada cauliflower soup that looks really good.

It's basically a "mire poix" of parsnip, leeks, and celery. Then you add cauliflower, chicken stock, thyme, and a Parmesan rind. After it's cooked and blended, you finish with some crispy salami and (get this) white chocolate. Apparently, according to Giada, using white chocolate over rich cream is fairly common in North Italy.

I really want to try it, but I'm going on vacation soon and don't want food in the fridge to go bad. Guess I'll make it when I get back! Excited!

I use cauliflower to make buffalo cauliflower wings, essentially battered breaded baked cauliflower trees then served with a buffalo sauce.

Cauliflower is also very versatile because it does not have a very strong flavor. I use it in a veggie sauce that I want to be white and creamy. Since it also has very few calories this kind of substitution added volume, color, and vitamins and minerals. Next time I need a white cream sauce, I'll be using my frozen cauliflower!

I follow Broccoli Mom and she uses it in SWEETS which easily overpower any flavor of cauliflower. (like I use spinach in my mint-nice-cream, where I want the color, the vitamins, the fiber, and none of the flavor)
Here are the mentions of 4 videos she's done on cauliflower and making desserts.
  • Healthy Sticky Toffee Pudding: A TikTok video posted in September 2025 where she makes sticky toffee pudding with cauliflower as a main ingredient.
  • Chocolate Ice Cream: She has multiple videos showing how to make a fudgy, vegan chocolate ice cream using frozen bananas, black beans, and frozen cauliflower, promising that you cannot taste the vegetables at all.
  • Chocolate Pudding/Mousse: Another variation where she blends chickpeas and cauliflower into a rich, fudgy chocolate pudding.
  • Vegan Magnums (Ice Cream Bars): A video where she makes low-calorie vegan ice cream bars ("magnums") using hidden kidney beans and steamed cauliflower.
at 9:40 she starts making banana-cauliflower-nice-cream. She adds frozen berries for color and flavor.
Don't judge it without trying it. When I had my first nice-cream made with bananas I thought I wouldn't like it because I'm not a fan of bananas, now I can eat it daily and I love it, in all flavors. I can't taste the bananas. Right now we've been eating a lot of the mint nice-cream made with spinach! Who'd of thought of it? Broccoli mom!
