Make-Ahead breads

Many people freeze bread and seem to be able to thaw it out and use it like it never was but when i try it turns out soggy. Now that Thanksgiving is on its way I am reminded of many years and many holidays of me biting off more than i can chew. pardon the pun. so this year i want to make some things ahead such as bread sticks and I was wondering if anyone can give me the secret. thanks.
 
Wrap in plastic before freezing. Allow to thaw (and reabsorb any moisture expelled during freezing) at room temperature. Crisp in preheated 350 - 375F oven for about 15 minutes.

i freeze a lot of bread, cause can't eat a whole loaf before it goes bad. put in zip lock bags. never had an trouble. do thaw out of wrap, then put back in bag to keep fresh as possible.
