Maple and Walnut Cake with mascarpone

Just thought I would share this lovely cake with you I made yesterday. It's a Delia Smith recipe and it's delightful! A delicious combination of walnuts, maple syrup and mascarpone, whats not to like?

You know that you are tempting me to make, and eat things that aren't very good for me at all, don't you.

For an amazing cake of the same nature, make two maple cakes. Cut each into three layers, each layer sitting on a thin, plastic sheet. Make a maple-buttercream frosting, with chopped walnuts mixed throughout. Spread a layer of frosting between each layer before topping with the next. Finish with the forsting spread over the top and onto the sides. Sprinkle with chopped walnuts and maple sugar.

Now, prepare to dive into maple Heaven.
