I have been buying food products I have never bought before, probably out of desperation of doing so much cooking and wanting easy dinners to prepare. These are/were frozen chicken patties with a slice of Monterey Jack cheese. I used them in a modified chicken parmesan dish.

What are you guys fixing?

We had cold smoked salmon on bagels with cream cheese, capers, and sliced onion. There were also some dill pickles. There seems to be some smoked salmon left, enough for another bagel. I may just have that as a snack later on.

Did a quick trip to Price Chopper for three on-sale items. In spite of their name, prices for everything are high unless they're loss leaders. But, they are the grocery store that will fry fish while you wait. Haddock and cod were $8.99 a pound, flounder was just a dollar more. No contest!

Flounder fillets, baked yellow potatoes, and shredded Brussels sprouts sauteed with bacon - dinner!

Went to Costco to pick up my TV connector so it seems a given that I would also picked up a rot chick for dinners and lunches.

Naturally, tonight's dinner included some chicken. I made a quesadilla with guacamole, cheese, chicken and pickled jalapeños. Tasted great!

Left over Mushroom Barley Soup ( which was better today after sitting over night)
Steamed Broccoli with butter
A poor attempt at making a Potato Pancake Stuffed with 'Chopped Meat' and Onions, but it tasted good.

I kinda winged he Potato Pancake recipe, so it didnt bind as well as it should have.
When deglazing the pan with the 'Chopped Meat'. I grabbed the vinegar bottle (Not marked) instead if the water bottle. Didnt ruin the dish, just aaadded a little twang to it.

Made a batch of meatballs to freeze so, made sense to put together a linguisa/marinara spaghetti. Also served a wedge salad and garlic dinner rolls.

Chocolate pudding was dessert.

Potato wedges with homemade dijon mustard. Toasted ww buns open faced with tomato mushroom sauce and olive relish on top.
Fudgey black bean brownies (no flour no nuts).

Store bought 3 cheese ravioli with a bit of butter, olive oil, garlic and a bunch of fresh herbs from my garden. Went well with garlic bread made from the homemade herb bread...
