I had a stressful day, so I went with a very simple supper. I had the rest of the lentil soup as an appetizer and some cold smoked salmon on a toasted wholewheat bagel with cream cheese, onion, and capers.

I was supposed to have Chicken Cordon Bleu rollups (chicken breasts covered with Dijon mustard and covered with breadcrumbs) with ham and gruyere. I went with a sliced chicken breast covered with spicy brown mustard covered in breadcrumbs and a sprinkle of chives with sliced ham and cheddar inside. This is half a breast here.

First serving of the batch stew made. Just potatoes and carrots with a bok choy thrown in for some green. Could serve two - so many potatoes (only 1/2 a russet!) probably should call it potato stew with some tasty morsels of boeuf. Nevertheless delish!

ps
much prefer my bok choy with soy sauce. Whites good but greens need the soy.
 
I thawed some leftover frozen bean and buckwheat soup, then I made a mixed salad with fresh tomatoes, cucumbers sweet corn, olives and mini pickled onions. With a small wholemeal roll.
