We must be having an Italian thing goin' because we had a casserole of pasta sauce with mild Italian sausage, mushrooms, wide noodles, covered with shredded mozzarella and baked. Italian green beans and yeast rolls to go with and the last of the bakery confetti cake roll.

I didn't expect to have any leftovers, but we have at least one more meal of the pasta casserole and beans. That'll make tomorrow's meal easy peasy.

I went to a brewery that serves food for a sit-at-the-bar mystery dining shop.

Chicken and bacon ranch piadina, which is kinda like a quesadilla. Really delicious.

Not pictured is the salted caramel cookie with vanilla ice cream because I told her just to package it to-go, I was too stuffed. I brought home half of the piadini and all of the baked potato as well. I'll have plenty for lunch tomorrow.

I had a salad of curly lettuce, thinly sliced red onion, celery, cucumber, radish, Kalamata olives, whole wheat croutons, and sardines. It was sort of based on a recipe from the Washington post. I used half a can of sardines, which was the right amount for the amount of salad I made, according to the recipe. But, then I tasted it and threw in the other half of that can of sardines. That really improved the flavour. The "dressing" was lemon juice, lemon rind, dill, parsley, and the liquid from the can.

I found a new recipe, a sort of a cod and carrot flan from a cooking magazine, but I modified and simplified it a little.

I steamed cod fillets, carrots, potatoes, then put them all in a mixer, seasoned with evoo, salt, black pepper, a dash of milk instead of egg, cheese, breadcrumbs, garlic powder, chives, parsley, then placed the mixture in a flan tin coated with evoo and breadcrumbs, sprinkled the top with more breadcrumbs and baked for about half an hour. It was delicious, sorry no picture.

So it’s crustless and is held together by breadcrumbs?
Interesting!

Sadly I did not have any fresh basil. I did put a sprinkle of powdered and also a pinch of dried crushed basil. Couldn't tell if it made a difference or not. But it was still delicious!
The shrimp were not overcooked but borderline. I think from now on I'm going to use 2 pans to make this rather than cooking the shrimp and adding back later. Rather dirty 2 pots than take a chance with chewy shrimp.

Edit: Well, I guess I was asleep - didn't realize I had posted already, oopsie!
