I just read through my frikadelle recipe again. I made a small correction. It said to scoop out about 1 tablespoon of the forcemeat with your tablespoon. That spoonful of forcemeat (frikadelle mix) should be very rounded. I figure there is between 1.5 and 2 tablespoons per frikadelle. But, that is for supper size. Go ahead and make them smaller if you want. The leftovers are good in a sandwich, especially with a small garnish of pickled red cabbage, or pickled beets, and/or well drained cucumber salad.
