Just leftovers again, so a mundain dinner here. Just got in from outside, since it's getting dark. Maybe tomorrow...

Finally feel capable of cooking again, so I made CG's chicken cordon bleu casserole and a salad (Curly lettuce, sorrel, rainbow chard, mustard greens, carrot, celery, cauliflower, red bell pepper, red onion). I made the Italian dressing the other day. We had that with wholegrain baguette with EVOO & balsamic vinegar for dipping the bread into. It was really good, if I do say so myself.

Corned beef sandwich - I cooked in IP, then left it to natural release on keep warm setting. It was so easy to cut paper thin after it sat for a while. It was still nice and warm. Sides were Thumann's potato salad and homemade Cole slaw. I just had the slaw.

taxy, you're making that chicken dish more than I do!

I needed to use up some of the broasted chicken. I made a chicken pot pie, but I no longer have a deep dish pie plate. Once I made the filling, I knew I was in trouble. Thankfully, my crust was wonderfully elastic (I used all lard), so I was able to get it to cover a Corelle French White 2.5-quart casserole. Now I need to get a deep dish pie plate!

Mundane indeed!!

A blah day so I reheated leftover chicken and rice for Jeannie and air fried a couple of corn dogs for me..

Made up for it with vanilla bean ice cream with bananas and chocolate syrup while Netflix watching, later.
