My noodle soup recipe

Just something I make on a fairly regular basis.

Ingredients (all amounts according to taste):
egg noodles
garlic
onions
mushrooms
soy sauce
cumin
salt
pepper
one egg
chicken (cut into small pieces)
grated cheese

Cook the chicken in a separate pan.
Bring water to a boil. Add in salt and soy sauce while it is heating.
Lower temp so it is simmering.
Add in mushrooms, onions, garlic, the chicken, cumin, and pepper.
Let it cook for a while, to create a brothy mixture.
Add in the noodles and the egg. Either leave the egg alone or stir it with the noodles. (It actually tastes pretty good if you let the yolk get solid on its own).
Let it cook for 8 minutes or until noodles are done.
Place into a bowl and let sit for a little bit. Top with grated cheese.
Serve.
 
Sounds good, reminds me of soba or buckwheat noodle soup.

Try tossing in a handful or chard or baby spinach leaves and some minced fresh ginger in place of the cumin!
 
It is my version of soba soup. Pretty much guessing the ingredients and after experimenting with different stuff, this is what I ended up liking. I may have to try your ideas, though.
 
My question is, 'why can't one have a "Beef" noodle soup. Or even "Lamb"? You could still make it with just broth and not have to thicken it.

Don't mind me today. I am not myself. My meds haven't kicked in yet. I need a nap! :angel:
