I live in the Heartland of the United States
Been a beautiful day here and I was able to get a few chores done, which will make the rest of the week easier.

No coffee here tonight, usually at breakfast time.

What we will have is 30-Minute Tuscan Tortellini with Sausage and Spinach. It's filled with all kinds of tasty goodies so all we'll have along with it is some rolls I'm going to turn into mini garlic breads. Still have some of the rainbow jellyroll cake for dessert. We're looking forward to it all.

No cooking here in Cowboyville Arizona, we went out to lunch with Mr&Mrs Next Door Neighbors for their wedding anniversary.

I had a Cubano with a side of Red Potato Salad, AHYUM!!!
DH is having the other half for his supper, along with some Potato Chips.

@Katie H Hand surgery? You do so much, how could you do it with less than very mobile hands?

I had lentil picadillo with marinated tofu. It sat very heavy. I drank a lot of water after that. I should have thrown in a cup of tomatoes and peppers instead of the tofu. Dessert: mint nice-cream w/semi sweet choco chips.
 
I made BBQ ham for sandwiches yesterday.
I put everything in the Instant Pot thinking that the slow cooker feature actually worked, and found out it does not. It's more like a warming button, even on high. Google confirmed this.
So I pressure cooked the ham on low pressure for five minutes and it came out pretty good.

I had three large sandwiches with a bread and butter pickle on each.

Wow! If the slow cooker feature is is just there to be used as a Keep Warm, then they should just label it as that. And/Or Reheat??

Yes. It's certainly not the multi-function appliance it's claimed to be. I only went to Google to figure out how to set the heat higher. And that's where I ran into others complaining about it's slow cook function and how even on High, it's not as hot as a regular slow cooker.
It got just warm enough to warm the sauce slightly after 1 hour.

But now I know.
And really, pressure cooking probably worked for the better anyway. I couldn't believe how fast it cycled. What with the low pressure, little amount of ingredients and short time. It came out better than simmering on a stove.
 
Wow, Katie, went to the site and that looks mighty tasty!

Tired, pretty warm today, my turn for Grandson's speech therapy. So freezer meal of a minced Beef pie with a couple of frozen scoops of mashers as well. (I freeze them separately). Very tasty!

ummm, couple of mouthfuls were gone when I snap the photo at 6:11 pm, and completely gone and looking for a sweet to have by 6:20? LOL 🐷
 
I just made my potato cheese bacon soup as it has now started to rain and I am now officially depressed. Well, OK, so the sun came out for a couple of minutes today. so not too depressed.

For once, I didn't get creative with the soup. Diced hash browns (32oz), some parsley and chives (I didn't have onions), 2 cups of cheddar, 1 cup of Mozzerella, some Parmesan, about 2oz of cream cheese, cubed, some sour cream, a cup of milk, and 12oz of bacon, diced and cooked. Two little halo oranges for dessert.

Isn't today International Coffee day, 1st October😀?
Do you get to celebrate it twice?

It's national government shutdown day here, and I'm flying to Denver today. Air Traffic control has to work without pay. Let's hope I get to Denver. :ohmy:;)
