I haven't had Rice Pudding in a Coon's Age! But that's not what I'm making today ...

This is a file photo of my Chicken & Hatch Chile, which just hit our markets here in Arizona, fresh by the way, Albuquerque-style Enchiladas.
I don't make them casserole style, rather on the diner's plate under the broiler.

Have a bell pepper in the refrigerator that needs attention so it's gonna get stuffed. We'll have tater bits fried in the air-fryer and, for dessert, who knows? I'll find something.

Probably won't be any leftovers but that's okay since we'll be dining at Glenn's daughter's house tomorrow and we always eat plenty there and come home with lots of goodies.

Looks like smooth sailing in the kitchen for a couple of days!
 
I have a Sour Creme Noodle Bake I've been wanting to make, have all the ingredients but just noticed.... it is for 8 Servings!
Just staring at it - trying to figure out if I want to go to all the trouble of halving everything - even at 4 servings, one gets a bit fed up with a dish. Or if I can freeze? Working on it. We'll get there.

I sympathise Dragn. I find it gets very wearing constantly having to cut recipes down for 2.
 
Unfortunately I've discovered that you can't just divide everything in half. Or in reverse, double it all.
Many recipe sites have a spot where you can double or halve but... it doesn't always work.
Besides... 1 divided by 2 = 1/2 even though I failed math miserably even I can do that. It's sauces, liquids, spices, etc. Actual meats & potatoes are easy.

I can see where halving a recipe could run into problems. However, doubling a recipe should be easy peasey. If you have problems doubling a recipe. Just make the original recipe twice.

Do you have the paid version of Copy Me That? The premium version will let you scale recipes. I use it all the time.
 
As soon as the outside temperature is reasonable, I plan to toss these wings I saw on clearance at Kroger on the grill. Not sure what to expect as far as flavor, but less than five bucks for a pretty good size package of wings was hard to pass up.

Sriracha and spicy mustard should taste alright.

I made a new to me recipe from Chef John for some lentil soup, which I had as an appetizer before the rest of my supper. I had more of the leftover chicken Stroganoff. This time I had it on brown basmati rice. It was some cooked rice that I dehydrated back in April. That worked well. Homemade, not quite instant rice. There was also a salad of curly red lettuce, scallions, and cucumber with some of my batch vinaigrette.

That soup is a keeper. It was really good.
