Yes sir! Taco Tuesday, but it's been raining all day and I want something warm and comforting...

I have Beef Stew sitting on the back low burner and I'm just about to make a fresh pot of that ever present Steamed White Rice.

We are both feeling under the weather. We ordered pizza for DH and a crispy chicken sandwich for me.

Bibimbap
Sautéed spinach and garlic, onions, shiitake and tree ear mushrooms in a brown sauce, lightly fried King Oyster mushrooms, Cabbage and bean sprout stir fry and tofu puffs all over sizzling crispy brown rice)

We had a small amount of corned beef and cabbage, about a serving and a half. To make up for that, I baked a loaf of yogurt rye bread. I could make a supper on just the bread and the "pot likker".

We went for lunch at our favorite deli restro. I got my usual of a 9 oz corned beef sandwich on an everything bagel with fries and half sour pickles. Craig got a turkey, ham, cheese, bacon, etc., club with fries.

Our dinner will be the remaining halves of our sandwiches.

Collards, mushrooms, onions, garlic, splash of soy sauce over veggie rice. Black bean brownie.

A boneless pork chop on a bed of stuffing with maple glazed carrots and cabbage salad.

Dinner last night was crispy “oven” fried wings, corn off the cob, and mashed potatoes. Homemade wing sauce (Frank's hot sauce, butter, vinegar, and honey), and blue cheese dressing on the side.

So...I figured it out and made Pasta Carbonara for dinner. Many years ago, a dear friend taught me how to make it, tomorrow would have been his birthday, so he's been on my mind.
