Navy Bean with Bacon Soup

Ok...I am cookin up some Navy Bean with Bacon Soup

1/4 pound lean bacon from butcher
1 pound Navy Neans (quick soaked)
1 cup copped celery
1 cup chopped carrots
1 small onion chopped
6 cups chicken broth
Salt and pepper to taste

cook bacon,drain and chop...cook celery,onions,and carrots in bacon fat and add this to pot with Beans and broth....bring to boil....lower to simmer..and cook partially covered for 2 hours...add more water if needed and season to taste. Serve with salad and fresh bread with butter.
 
I use a method similar to Bang's except I bring the beans to a boil and then shut the heat off and let soak for two hours. Works pretty good for me!

I cover the beans with enough water to cover by 2 inches. Bring to a boil and cook for 5 minutes......then remove from heat cover and let sit for one hour.
