As many of you know, I've been playing with a "pudding" cookie recipe I found on the www.momontimeout.com website. She began with a pistachio version, and I took it and ran with it to create almond, butterscotch and lemon varieties. All wonderful.
Okay, so I discovered the creamsicle one. I did consider adding a bit of orange extract but decided against it, following my own rule of "do the recipe as directed" for the first time. Not sure if I'll play with it except, perhaps, to toy with a raspberry-flavored variation. I suppose lemon would be worth a try, too. Time will tell.
We just sampled some of the cookies. Glenn's comment, "They DO taste like a creamsicle."
