I built a solar oven, but the temperature is still not hot enough, 200 degrees F.
Has thatch mortar sides (not airtight yet), brick base, single pane glass panels atop. Large. Interior mirrors don’t completely covering interior sides yet. No folding side panels.
Advice on improving performance is welcome ! Thank you

Well, that is some project Craig, of which I know nothing about. Hopefully someone will chime in and have some suggestions.
But in the meanwhile ...

Wow, it looks like you have all your bases covered.
Getting it air tight will help.
-foil or metal inside
-glass on top (does it allow for changing the angle to get more sun?)
-brick/mortar good insulation value
What temperature are you trying to reach?
I wish I had a suggestion for you.
I don't have one, haven't built one but use an 18 qt black interior roaster oven base with a foil pan inside and old window glass on top. It gets to maybe 170 deg F when I measured. I use it for melting bees wax, straining it through tough paper towel and a metal grate into the foil pan.
 
You could go to instructables dot com. There are solar ovens from pizza boxes to one that tracks with the sun. That guy could probably help.
