Washing Up
Excellent for vegetarians and us carnavours as well for a change.
NUT BURGERS
1-1/2 to 2 cups peanuts
1/2 cup chopped onion
2 Tbs chopped pepper of your choice, I use red, yellow or orange
2/3 cup chopped zucchini or yellow squash
1 clove garlic
dash of dried basill and dill weed
2 Tbs soy sauce
1/2 cup water
1/2 cup shredded carrot
1/2 cup bulgur or couscous (somtimes I have used quinoa)
1/3 cup butter or margarine
6-8 slices of cheddar or your favorite cheese
Process peanuts in food processor and set aside. Place onion, pepper, zucchini (or other squach), garlic, basil, dill weed, soy sauce adn water in food processor and puree. Pour into a large sauce pan and add carrots and bulgur. Bring to a boil and simmer 10 minutes. Remove from heat. Stir in ground nuts and mix until well blended. Shape into patties and saute in butter or oil until browned and heated thru, top with cheese to melt and serve with buns and lettuce, tomatoe, onion or whatever.
These are very good, coming from a carnivour. EDIT: I just thought of something, if you added an egg you could probably bake in a rectangular baking pan as a meatless loaf.
