Whatever you do OP, make sure an overeasy egg is an add-on option for your sandwiches. I, for one, will order an overeasy egg on my sandwiches 99% of the time if it's offered. And people will pay $1-2 all day for an overeasy egg, when your cost is only cents per egg.

Sauteed mushrooms with wilted spinach (pile high) and a slice of havarti on grilled wheat bread.
A falafel sandwich
A pressed sandwich with baby mozzarella, grilled sliced eggplant, grilled sweet red peppers and a slathering of pesto


How about some interesting and non standard calzones (using your house dough)?
Turkey pot pie calzone
Tuna melt
Artichoke, sundried tomatoes and herbed chevre
refried Black beans, tomatoes, grilled onions and peppers, cheddar
Spinach, ricotta, tomatoe, etc..


Homemade spiced catsup and mayos for burgers and sandwiches:
Curried catsup
mayo with tamarind and seracha
Mayo with shallots and chives
etc...

if you going to make pork belly, might as well add tongue, maybe even heart in that mix. Not necessary together.
