I have had an Australian rack of lamb sitting in the fridge for some time. I told myself I couldn't eat it until I finished my taxes. Did that yesterday so tonight's dinner was rack of lamb encrusted with herbs along with bulgar pilaf. Oh my! it was sooooo good. This and duck breast are in my top five.

Not too sure what I was going to have but it flew out the window around 4:30 pm.
Grabbed from the fridge, leftover Black Bean & Rice, leftover Meatloaf, leftover Egg Salad. Piled them on a plate and set to.

I slept in this morning, after an orange juice and a coffee headed straight for the gym. Hit 4 stores on the way home, dumped all on the floor, ran out the door again for grandson to get to therapy (I don't normally take him Monday's, my turn is to a different one on Tuesday's), got lost coming out of a warren den of streets when I left and finally back.
I was a bit grumpy, tired and very hungry... so it was delicious!
 
I made some asparagus soup. I have used this recipe before and gave it 5 stars out of 5. I really wouldn't say that it was that good today. It might be because I used a different kind of canned asparagus. There were some very fibrous pieces that I had to spit out. Oh well, I'll take a note that I don't like that brand. I had a sandwich with one of those little homemade sausages, and red lettuce on whole wheat bread.

As you can see, the bread got toasted a bit too dark. It tasted fine, but it set off the smoke detector. It had been up for a couple of minutes when I pulled it out of the toaster and that was when the smoked detector started screaming. I went to push the button that tells it to ignore smoke for five minutes or so. I was fiddling with the step ladder, trying to get it open. When I finally did get it open, the smoke detector turned itself off, without me needing to climb the step ladder. It has done that to me once before.

I made some asparagus soup. I have used this recipe before and gave it 5 stars out of 5. I really wouldn't say that it was that good today. It might be because I used a different kind of canned asparagus. There were some very fibrous pieces that I had to spit out.

I grew up eating canned asparagus, and it was always a mix of mushy and fibrous.

I e-filed my taxes at 12:30 AM today (I hate doing my taxes, and put it off till the last day). I wish I had those lamb chops as a reward. :D

I'm new to canned asparagus. I never liked the colour of the canned asparagus, so I didn't want to eat it. I guess I'll wait until asparagus season and make it with fresh asparagus.

Yeah, I'd wait until you can get fresh asparagus, trim it and maybe lightly steam it before putting in a soup.

I can get fresh asparagus all year long. I don't know where it is coming from. The only difference is the diameter of the asparagus at different times. I personally like the skinny stalks, but other people like the thicker stalks.

Do you use a cornbread batter? Is it just a top crust? I've never heard of doing this, and would love to know more about how you do it.

This is a new recipe for us. Literally 1st time and it needs some work.

We used cornbread mix, spread on top of the filling. So, just a top crust.

What I didn't like:
Batter mingled with the filling. CBread on top but some batter in the filling that gave an odd texture.

Next time try:
Instead of mixing the cheese on the filling, spread on top to act as a barrier to the batter maybe. Needs research.

The other technique you can try is to make sure that the filling is cold before adding the topping and then bake.
