I made an old standby, Linda's pot o' pig. It's based on a dish we were served in a Danish pub called Fridas Kasserolle. The pub was owned by Frida. It's my best imitation of that dish. I served it with boiled potatoes and two kinds of pickled beets - regular Danish style and the same, but with hot peppers. We really enjoyed this meal.

I've made Impossible Chili Cheese Pie. We'll be eating soon. I'll serve it with guac, salsa, sour cream...and a salad of homegrown lettuce with homemade 1000 Island. Yum!
