When I started flipping food in a pan I worked in a supper club in 1985. We did the hash browns in 6' cast iron skillets. Lightly spray the pan, add 1 tsp. oil. Get it good & hot add fresh shredded potatoes & let it form a crust. Move it around in the pan by roatating it around with your wrist. With a quick flip of your wrist it will toss over nicely.
