Pea & Mint Soup

This is my best pea and mint soup recipe. This recipe makes enough for three as a main course or 4-5 as starters (depending on how much you dish up)
1. Chop up an onion
2. Fry the onion
3. When onion is cooked, add a litre of vegetable stock and 650g of peas

4. Cook until peas are cooked
5. Add a fee tablespoons of finely chopped fresh mint
6. Blend with a hand-held blender and add a generous drizzle of double cream whilst blending
7. Soup is ready. If blending is done ASAP after cooking, it is ready to eat. If it is not time to serve, leave in pan with lid on and cook again before serving

I served it as a main course for three. Works well with focaccia (we happened to have some left-over focaccia pieces)

Love the short ingredient list. and I think the ability to adjust quantity (especially for one) is even better. Just my style.
 
I'd have to wait about 3 months, or maybe a little less, until I make that. That's when my mint is in is filling in the bed out there! Love fresh mint!

Which kind of mint do you use - the peppermint (sort of roundish leaves, and what I see in Indian markets) or the spearmint (the pointed leaf type, I see more in SE Asian markets)? I have both in my bed, once they start growing again.

It depends. For this recipe I got it from my fresh mint plant which happens to be peppermint. I suppose either could work
 
Looks really good! Peas and mint are a great combo. We have acres of mint in the summer ….

What do you think about serving it cold?
