Messing about in the kitchen last night, I decided to try and make pineapple carmel!!
IT WORKED.. possibly the greatest tasting caramel I have ever tasted. Unfortunately I didn't actually measure anything, I just tossed it together.
I started by melting down some butter, adding both brown and white sugar and a little milk. Once that had all combined I poured in some pineapple juice, brought it up to a boil and cooked it until it got to the tacky bubble stage(sorry, no thermometer, I cooked it my sight and feel).
Once it cooled a bit, stirred it to stretch the sugars and put it out to cool in the refrigerator.
Nice Stuff!! i will make this again, but a full batch. I only made a couple of tablespoons worth for the trial batch.
You can look up a caramel recipe, just change out some of the liquid with pineapple juice.
