Pizza...olive oil base instead of tomato sauce

For a change of pace I like to make pizza drizzled with olive oil, roasted garlic or just crushed, carmelized onions, goat cheese or feta, very small broccoli floweretts, and roasted walnuts....really yummy!!!

And if I feel energetic I will pre-make my dough, cook on grill on both sides, then when ready to make pizza just add toppings and place back on a low heat on the grill to melt everything.

I also like the toppings roasted red peppers, carmelized shallots, fresh mozzarella, and fresh basil chiffonade.

it kind of reminds me of the toasted pita pockets i make. I stuff them with cheese and peppers, toothpick them shut, brush them with olive oil, salt and pepper them, and toast them on the grill.
 
cool carnivore - a little Mediterranean twist on the quesadilla! And, wouldn't some "smoke" give the pizza a great flavor - I might have to try that next.
