PORK TACO MIX CHILI

1# pork shoulder meat, cooked to shreds, :LOL: diced ½”
1 package taco seasoning mix
1 can diced tomatoes with liquid

I used some of this to make a dinner of 3 crispy tacos, then

Made another dinner of 4 mini burritos, toasted in the oven.

I used the remaining mixture to make chili, adding:

1 can (another) diced tomatoes
1 cup V8 (or so)
Chili powder

The final flavor was complex and very, very good. I think it had to be the V8.:chef:
 
Zz, tell me a little more about how you made "toasted mini burritos," please?

... soft, small flour tortilla... burrito wrap-n-roll... sheet pan... 375, 20 minutes... am I close? brush the burrito with oil?

Pretty close. Taco meat and cheese wrap-n-roll in a small flour tortilla.

I use a casserole dish, keeping them separated, but anything will do, even a sheet of foil.

350° 30 minutes. No spray.

This works just as well with larger tortillas, but I like the little ones better. They're lots easier to store in the fridge or freezer than the big ones.:chef:
