Hi All!

I made stuffed peppers today in the oven. Fried onion and courgette in olive oil then after a couple of minutes added garlic, cherry tomatoes, seasoning and ground cumin and coriander. Then (with rice already cooked) I mixed all of the above in a bowl with a handful or chopped fresh parsley. Stuffed it into some peppers, added a couple of cubes of goats cheese to each pepper and baked in the oven for 10 mins.

Well that's how they were made anyway. What I want to know, is gonna have them tomorrow for lunch and how would I go about reheating? Oven again I was thinking.

The rice is the biggest worry for me.

Thanks.

Ditto. If your microwave has a power setting, try setting it to 50 percent for a little longer. Use an instant-read thermometer to check when it's hot enough inside.
