Signs are up! Summer time Rib Fest is starting - here in Waterdown there will be one weekend of June 27th. I always get excited except I don't generally like those kinds of wet ribs - I like dry!
Honestly I don't like the crowds nor the parking. So I stay at home and enjoy my own. Silly old dragn. 😄

I'll mark that on my calendar, and watch for a sale on pork ribs. I prefer mine dry rubbed, smoked and not sauced, too.

New smoker assembled and ready to go. Low and slow, dry rub, no sauce here too.

Seasoning burn in progress. Coated the inside surfaces with Canola oil. Using about #10 of lump charcoal and some pecan wood for fuel.

Performs well, burning fuel efficiently without clouds of white/black smoke. No major leaks and the fire department hasn't shown up...yet. :brows:

It's both a grill and a smoker. Functions depends on location of the fire.

Lower firebox for smoking/indirect cooking
Upper firebox for grilling.

Cabela's makes a pellet smoker that can do grilling too. I went with the pellet smoker only mode. I have two 22-inch Weber Kettles, and a Weber Jumbo Joe, so I didn't see any point in spending more money for something that would be redundant.

If a person only has $150 to spend on a grill/smoker, I still say that a Weber 22-inch kettle is THE way to go. It is the Swiss Army Knife of outdoor cooking.

My BIL swears by the Weber kettles. I've had many a meal cooked on one. They do a good job.

Of course you will still have your Weber's! Might have to squeeze them onto your little balcony at your Retirement Village. And they may not let you light them. Oh well...
 
Yes of course! I totally agree. Really, you can still skid in broadside on a trike. Just like normal, gun it, brake and turn the handles.
Just not too sharp please, I don't want to fly off the back too hard. I might spill my drink.

I want to die in my sleep, just like my grandfather did. Not screaming in terror like the other three people in his car.

I use a 26" Weber kettle to smoke. I found diagram here on DC explaining how to set it up. It works for me. I've done ribs, butts, turkey breast, whole chicken, thighs and pork loin roast. No complaints.
