Doing ribs and chicken, beans, and slaw and cake. (no drinks) for 75 people
my question is the quantity of ribs... I get St. Louis cut spares (curly's) by the case...which is usually 13 or 14 racks per case...
I am thinking 2 cases will do me.. that is 1/3 rack per person (i will cut in single bones)... does that sound reasonable with the chicken back-up?.... croud will be mostly men.
I get those cases of curlys for about 60 bucks... gimme a price check also....
